Hearty Chunky Vegetarian Chili

I love soups, stews and chilies (side note: I know the word "chilies" looks weird but apparently there are 4 different ways to write the plural of "chili" and none of them looked right to me - but there it is).  I am known to throw random stuff in a pot and make up a soup on the fly - it's sort of a "thing" of mine.  Anyway, most of my friends have had my regular chili recipe which includes meat.  It's my great grandmother's recipe and it's divine.  But I try to limit my meat consumption so I made this one up a few years ago.  It's killer and SO easy to make.  And it's gluten free and vegan and dairy free and all of that good stuff. It's real hearty and filling.  I serve it with corn chips and a little (vegan) sour cream.  Dress it up however you like.  I also make nachos with the leftovers.  YUMMY!  

I totally thought I had posted this recipe already, but I found it in my folder of blog drafts.  Since football is here and we've got a little chill in the air, I thought it was the perfect time to post it!  Enjoy! 
  • about 1 bell pepper chopped (about a cup after you've chopped it)- i use green and yellow or red - do a combo of some sort but definitely include green (a poblano pepper would probably be good too)
  • 1 med sweet onion chopped (about a cup and a half)
  • about 3 cloves garlic, minced  - or about 2 teaspoons bottled minced garlic
  • 4 cans of beans - i usually do a combo of kidney, black and pinto - REMEMBER that canned kidney beans at the regular grocery store have high fructose corn syrup in them - the canned kidney beans at whole foods are the only ones that don't.  I also am pretty sure that the Publix "Greenwise" brand doesn't have sugar added but double check me on that. 
  • 2 cans diced tomatoes - again - i use diced and not stewed because stewed tomatoes have sugar added.  Make sure to get the plain diced tomatoes and not the ones with garlic or Italian seasoning added.  For this recipe I like to use one can of regular diced tomatoes and 1 can of petite diced tomatoes - the difference in size really makes a difference in the chili
  • 2 1/2 tablespoons cumin
  • 2 tablespoons chili powder
  • a few dashes of ground red pepper - I like alot so I probably use about 1/2 teaspoon or so
  • salt and black pepper to taste. 
  • dried oregano - maybe 2 teaspoons - i don't know cause I never measure anything when I make stuff up - the oregano is important - brings out flavors in mexican stuff.  don't skip it even tho you're not used to using it in chili. 
  • 1/4 teaspoon stevia or other sweetener - stevia is very concentrated so if using something else you will probably use much more
  • 1-2 teaspoons cocoa powder (optional)

1)  heat a dutch oven on medium, add a little olive oil and just saute the peppers, onions and garlic until tender. 
2)  drain and rinse beans and add them, then add the tomatoes with the juice
3)  add the seasonings and cocoa powder
4)  Stir well and bring to a boil and then reduce to a simmer.
5)  Allow it to simmer for about 30 minutes - longer if you can - stirring occasionally.  As it cooks make sure to taste and re-season as needed.  

As with most soups, the longer you allow it to cook, the better it will be!

I use stevia to sweeten but you can use whatever you want.  Just add a little at a time til it's sweet enough.  Not too sweet but you want to be able to taste it.  And as for the seasonings, I'm a big fan of cumin but you may not like that much - or you may want to add more chili powder - just play with it!

Wednesday's workout was a 4 mile run with an all Jay-Z mix.  I did a shuffle of the MTV Unplugged Album and the Blueprint 3 album.

That MTV album is super awesome and I highly recommend it.  Jay-Z is someone that I never really got in to back in the day.... I was always into the old school gangster rap like Tupac and Bone and the "booty" rap stuff like Kilo and Raheem.  Jay-Z fell in a completely different category of rap in my opinion.  But since I've been with Eric, he has exposed me to alot of Jay-Z and I like his stuff.  Eric says his "Black" album was his best but I haven't listened to that one much.  Also, in case you've been living under a rock and didn't know about Jay-Z's best selling book that came out last year, you should check that out too.  It's called Decoded.  

Thursday night I did group fitness classes - BodyStep and BodyPump - so no music to report there.

9.7.11 Workout

I've decided that even if you're not a runner or gym rat that maybe posting my workouts and my music will inspire you.  Either you'll get some cool workout ideas OR learn about some new music.  Either way I like the idea of continuing to post them...it keeps me motivated! 

Last night's workout was a hodgepodge of sorts.  I normally do BodyPump on Tuesday night's but I was running late getting out of work and didn't make it for the start of class.  But I was super energetic -thanks to all the hot coffee I'd had- so I ended up having an awesome workout.  I warmed up with some intense cardio and then did a circuit type thing.  Here's what I did:

About 25-30 minutes hard on the arc trainer at a max 20 incline and resistance between 25 and 35
Rowing machine super fast for 5 minutes
(Heart rate sky high right now)
Platform jumps (with 4 risers) - 3 sets of 10
Pushups til I couldn't do anymore
Lunges - "Pump style" for about 5 minutes
Tricep pushups off the bench
Tricep dips
BodyStep "Power Knees" in intervals with jogging basics in between (2 risers)
Knee Repeaters (2 risers)
Walking planks

All of that was in about 50 minutes to an hour.  Kept moving super fast to keep my heart rate up! Booyah!

Music: I started out on an Alternative mix but then went Classic Rock for a while, then ended up in Pop.  When I started getting tired I turned to one of my favorite workout playlists:

Aahhhhh Football

This weekend was the opening weekend of college football.  For many southerners, this particular Saturday is like Christmas morning.  If you don't live in the south or you aren't a college football fan, you just don't get it.  And that's fine.  But I thank God I was born here and that I was raised a football fan.  There is nothing more exciting than the energy in the air on that first weekend in September.  This weekend marks the beginning of the whirlwind that is the college football season.  We live for it all year, it flies by like the blink of an eye, and just like that it's over and the non-football depression sets in! 

It's only fitting that my best friend gave birth on this weekend last year.  She and her husband are huge football fans and they are "A House Divided" - which, in football-speak, means one is an Alabama fan and one is an Auburn fan! They had a baby girl (who by default is an Auburn fan because mom has ultimate power) and thus began the never-ending attempts to get her to say "Roll Tide" and "War Eagle," to put her in something crimson when mom isn't looking, and the inevitable jokes about when she gets old enough to really "choose" for herself.  But having a baby on the opening weekend of college football essentially means that her birthday parties will always include football in some capacity.  So her first birthday party was, of course, Alabama/Auburn themed.  Lindsay and Ryan pulled out all the stops and threw an awesome shindig.  They rented a projection screen TV for the Bama game and had another large screen for the Auburn game, they catered fun tailgate food, rented a moon bounce for the kiddos, iced down tubs of beer for the adults and Capri Sun's for the little ones, and decorated to the hilt in everything crimson and white, orange and blue that they could get their hands on.  It was an AWESOME party!!  And oh dear god how much do I love that Ansley Dean Miller!!!!  Words can't express how excited I am to watch her grow up...and how much I'm going to learn from her amazing parents when I have my own kids.  See pictures from the party below.  

Keeping with his tradition of spending opening weekend with his friend Nick in Atlanta, Eric was gone and I was solo.  So our friend Blake tagged along and was my date for the day.  We spent the morning at the birthday party and then we hit up Pale Eddie's for the night games.  We met up with my friends Sara, Jonathan and Erin and funzies ensued.  Overall it was an awesome day of football, good friends and fun.  

I'm so excited about this football season...well, the whole year really because I'm getting married and starting a life with my perfect match :)   ...but football season is just so fun and Eric and I have so much fun together during football season - despite being a house divided!!!  I love getting up on crisp fall mornings, putting on a pot of chili, icing down a bunch of beer and waiting for friends to arrive...I love the anticipation of kick off...I love going to games, the smell of the quad, the food cooking, the sound of The Million Dollar Band, and the way the coffee in the stadium is the greatest thing EVER during a cold November game...  I love finding every way possible to incorporate crimson and white into my outfit almost daily... I love watching Eric get excited and yell at the games... I love being in the stadium and screaming Rammer Jammer as loud as I can....I love phone calls with my Daddy on Sunday mornings hashing out the game and what our strategy for the next week should be....I love making fun of the refs and the bad calls...I love watching Gameday and getting pumped up...I love Tiffany Wade's weekly "Happy Gameday" text....I love hating Les Miles more and more every year...I love the office banter with Auburn fan coworkers...I love knowing we have bowl games to look forward to after the holidays...I love listening to analysis on sports radio on Monday mornings...I love hating Finebaum more between September and January.... I love going out for breakfast with Eric on Sunday mornings and sitting in complete silence as we read our respective columns in the Football U section of the paper.... I love the way Alabama and Auburn fans talk shit but when it really comes down to it we are damn proud to be each other's rival and know that no one outside of this state really understands what that's about....

I LOVE FOOTBALL.  I JUST LOVE FOOTBALL....

Running/Workout Music

I've decided to start posting my run mixes on my blog.  Sometimes I shuffle, sometimes I create playlists, sometimes I pick one artist for the whole run, sometimes I shuffle within one genre - it always depends on my mood.  But I'm always looking for good workout mixes and I know other runners are too.  

Tonight I did 4.2 miles mostly on hills.  Would've liked to do more but there was a storm coming and it's getting dark much faster this time of year.  I love late summer/early fall runs when a storm is brewing.  It's windy and cool and the air feels electric.  Plus there's always that thought that the bottom might fall out any minute so you run faster trying to get the run in and get back home. A few leaves have started falling and they were blowing and rustling around and there was an eerie, cloudy darkness.  It was killer.  I made it back just before the rain started!
